You’ve asked and you shall receive – we’re thrilled to lift the veils behind our beloved focaccina trio, the love child of focaccia and pizza. Led by Fico’s very own, Sous Chef Fercie, who is responsible for everything flour and bread in the kitchens of Somma and Fico everyday.

Learn how to work with Semola dough – how it feels in your hands, how to treat it right. You’ll shape your own focaccina and pair it with different toppings, the same ones we use at the restaurant, to take home.

It’s not just a recipe – it’s a little piece of what we do, and why we do it.
