This November, we're thrilled to welcome Chef Sebastian Jiménez García from Ræst, recognised with The Best Chef Awards' 'Next Gen' Award 2025, for our very first Four Hands.

At Ræst, every dish is a journey to the Faroe Islands, showcasing their bold, creative and well-balanced approach to bridging tradition with innovation. Not only do they use local ingredients, but their philosophy centres on allowing nature (the wind, air, and microflora) to play a part in the cooking and preservation process. 

Drawing on his Mexican roots, Chef Sebastian blends traditional Faroese techniques with diverse food cultures. Ræst’s dedication to honouring ancient Faroese fermentation techniques aligns in harmony with Somma’s contemporary Italian philosophy, where time-honoured methods are revived with precision, freshness, and intent.

For two nights only, experience a menu that brings together Chef Sebastian’s Faroese and Mexican influences with Chef Mirko’s bold Italian creations, guided by their shared love for exceptional ingredients.
